Middle-Eastern Rice

Rice is made all over the world ! My family has lived in Palestine, Lebanon and Syria so a lot of my cooking is a fusion of all three countries.The rice I am going to be sharing is called riz bi sha’riyeh, a very quick and easy rice recipe. This rice is such a simple dish to add to any meal and is a staple in my household since childhood.
Ingredients:

2 cups basmati rice
3/4 cup drum wheat semolina pasta or vermicelli (crushed)
2 tsp salt
2 1/2 water (if you have a kettle it can be boiled to speed up the processes)
4 tbsp oil
Instructions:
1. Wash and drain rice with cold water until water comes out clear. Set aside
2. In a medium pot heat up the oil, add the semolina pasta stir until golden brown. Make sure not to over cook them.

3. Once golden brown add the rice, salt and stir together.

4. Turn the heat to high, add the water, give one last stir and cover the pot. Reduce the heat to low, cook for 18 mins. Make sure not to uncover until the time is done.

5. Once time is done let cool for a few minutes then uncover and fluff with fork.
6. Enjoy warm with your meal.
