Tea Cake

This cake is such a delight, it is a perfect snack with a cup of tea or coffee.

 

Ingredients:


- 4 eggs 

- 1 1/2 cup Sugar

- 2 cups Flour 

- 3 tsp Baking Powder

- 1/2 tsp Vanilla

- 3/4 cup Vegetable oil

- 3/4 cup Orange juice


 

Instructions:

  1. Preheat oven to 350°F grease and flour a fluted cake pan.

2. Separate the eggs, whites in one bowl and yolks in another


3. With a hand blender, mix the whites until firm peeks form, about 4 mins



4. Add baking powder and Vanilla to the egg whites and blend together. Set aside.

5. Blend the yolks together, once mixed add the sugar, oil and orange juice, mix well.



6. Alternate folding in the egg whites and flour into the bowl of yolks until everything is combined. Make sure not to over mix the batter. Transfer batter to cake pan.


  1. Bake for about 35mins or until toothpick comes out dry.
